CHILI RELLENOS QUICHE
(She brought this to the Easter Breakfast and it is YUMM-O!)
2# shredded cheese (fiesta or Mexican 4 cheese mix)
2 large cans whole green chilis
12 eggs
4 cups milk
2 cups Bisquick (or homemade bisquick below)
1 tbsp. ground cumin
Spray 13x10 pan. Layer 1 can of the rinsed green chili strips in pan
Cover with ½ of the shredded cheese
Repeat with 2nd can of chilis and cheese
Mix the eggs, milk, cumin and bisquick and pour over the chilis and cheese.
Bake at 350 degrees for 1 hour 15 minutes
HOMEMADE BISQUICK
2 cups flour
1 tsp salt
1 tbsp baking powder
1/3 cup vegetable shortening
Mix the flour, salt, baking powder together. Cut in the shortening with a pastry cutter or whisk attachment on a stand mixer until the mixture has turned to fine crumbles.
